What comes to mind when you hear, CUPCAKES? Most of us have an imagine of small muffin with whip cream icing on top. For the more fancy thinkers, you could add some sprinklers on that icing. Well that said, have you ever wondered about the origin of a cupcake? Ever thought about where it all started from? Don’t know about you, but I have, and so I decided to do some fact finding. The ones who are still wondering about the origin, here is what I’ve gathered from my bit of reading. So here goes everything you must know about, Cupcakes –

 

It all started with CAKES. Duh, Obviously! Lol, no but really, it did start with cakes. The idea of having large measurements of ingredients became cliched over time and cupcakes bought a more well suited modern sensibilities of cake serving that didn’t take over 4 hours or more to bake. Yes, that’s how long it took back in the days. These small bites of portable, portioned and distinguished invention was first brought to light in the early 17th Century. Cupcakes were referred to as number cake, then. Why? Because they were easy to remember by the measurement of ingredients it took to make them: One cup of butter, two cups of sugar, three cups of flour, four eggs, one cup of milk, and one spoonful of soda. And Tta Daa, you have yourself a cupcake cakesandmore. Clearly, cupcakes today have expanded to a much wider variety of ingredients, measurements and decorations. This however was one of the first cupcake recipes, we know of.

The first official cupcake recipe was recorded in 1776, this was a basic recipe to make light cakesandmore in cups. In 1871, these number cakes were served in more variety as innovation grew. These were selling 25% more than the regular muffins, and eventually became the only kind of cupcake that were sold by Hostess Cupcake.

But, home cooks were still using hearth ovens to bake cakes which took until blue moon to get them out and ready to eat. Worst of all, the final serving would often be burned. Ever since their creation, cupcakes have been a popular trend in the culinary world. They have dominated dozens of bakeries devoted completely to them. With Chocolate and Vanilla still being the classic choices, rich flavors like, Red Velvet, Lemon Meringue, Blueberry Punch and Espresso Fudge are trending more for the likes of Instagram. That’s just how it is, but let’s not take away from what these cupcakes are really – easy to make, good looking, great tasting, inexpensive, bite size-able delight, you can never say no to.

Chocolate Cake Recipe

Does this ever happen with you that you meet someone really interesting, spark with them (girl or guy) and then wish they like to do the same things you do when no one’s watching? It happened with me recently, I met this really great gal, she and I just clicked on levels that I didn’t know I could reach with another human, it was great. And I couldn’t keep myself from asking her, if she enjoys chocolate cakeandmore. Because, God knows how much I do. That’s my guilty pleasure. And guess what? She did! You must be wondering why are you reading about this on a chocolate cake blog, but wait for it…

 

She told me she had been looking for recipes to come up with a perfect Chocolate Cakeandmore. For over 3 months, she had been experimenting with the ingredients and she had finally settled on what works best to make a perfect chocolate cakeandmore. I couldn’t wait to try it and she couldn’t hold back from sharing (too kind, I must say). And after my first big bite into this cakeandmore, I asked myself if this is the best chocolate cakeandmore I had eaten so far. YES. It was undoubtedly the perfect chocolate cake, I’d had. It felt like I found my soulmate in her, after every bite of this cake. Trust me you ladies and nice guys looking for the perfect chocolate cakeandmore recipe, you want this cake in your life. Because that’s what I did and now I’m here sharing it with you’ll (my soulmate knows it’s being shared ;P)

 

For all those blue days, cranky bays, painful rules and dull pulls, you just need a nice big slice of this decadent marvel and you’d be good to go. Alright, enuf said!

Here’s the recipe and steps to make the most delicious and moist three layered chocolate cakeandmore, of all times:

  • First preheat the oven to 350 degrees F.
  • Second we butter a 9 inch pan. Put some soften butter on a paper towel and spread evenly on the bottom and sides of the pan. Make sure you get all the sides and edges, you don’t want this cake to stick.
  • Pour some, all purpose flour or cocoa powder. But since this is our ultimate chocolate cakeandmore, I’d suggest you go with cocoa powder. Sprinkle it in and shake the pan back and forth until it’s evenly spread out. Don’t forget to get the edges and tap the excess powder out.
  • Repeat the same in the other two pans, for the other two layers since this is going to be a three layer cake. Making it all at once and then cutting three layers out won’t go justice to this cakeandmore. So I’d suggest we bake all three layers separately.
  • Next, we put together a batter: In a large mixing bowl combine – 3 cups of flour, 3 cups of sugar, 1.5 cups of cocoa powder, 1 tablespoon of baking soda, 1.5 teaspoons of baking powder, 1.5 teaspoons of salt.
  • Add all the wet ingredients: Pour in 4 eggs, 1.5 cups of buttermilk, 1.5 cups of hot water, 0.5 cup of vegetable oil, and mix it all together with a hand mixer or whisk. You don’t want to over mix this, we are just looking to combine all the ingredients and make sure there isn’t any flour or cocoa powder left on the sides or in lumps.
  • Now divide the batter in three pans. The easiest way to do this is with a measuring cup. It take about 3 cups of the batter in each pan to fill evenly.
  • Bake these at 350 degree for 30 to 35 mins. Make sure you place this in the center of the oven to bake well.
  • Bring them out of the oven once they are baked. Allow them to cool for 10 mins before taking them out of the pan. While you wait for the cakes to cool completely, you can go ahead and make your frosting.
  • Chocolate Cream Cheese Buttercream Frosting: Now this where all the cream to your cake lies.
  • Start with 225 grams of cream cheese in a bowl along with 1.5 cups of soften butter. Use a hand mixed to whip it together. Once it’s light and fluffy, add 1.5 cups of cocoa powder, a couple spoons of milk and mix it together. The amount of milk you want to add can vary, so just eyeball it. Next, we need 8 cups of sugar total, but add it one cup at a time and mix. In the end, it should look like a smooth fluffy frosting.
  • Now that our cakesandmore are cool, we can put it all together with the frosting. Take the first cake and layer it up with the frosting evenly, repeat the same for the other two layers. Once all the three layers are piled together, get the frosting spread smoothly from all sides.

Note: The quality of cocoa powder you use for the batter and frosting really matters. Go for the highest quality you can find.

Easy French Macarons Recipe

Easter Sunday went by last weekend, thanks to which I had a good long weekend that started on Good Friday. Since I have friends who start their Easter parties on Saturday night and go on celebrating till Sunday evening, I decided to bake them something as munchies. Now we all know how significant eggs are on Easter, but I wanted to have something different this year. And so I thought of, Macarons  cakesandmore.

For the ones who don’t know, Macarons are French cookie cakesandmore sandwich with creamy icing in the middle. These tiny cookie sandwiches has become the recent favorite dessert for most. So I thought, why not make a batch, put them in a pretty box tied up with ribbon, and bring them to my friends as a dazzling gift. And while I was at it, I thought I’d share my making process with you. Just so if you’d want to Macaron your way into a party someday 😉 (Easter or not :p).

 

INGREDIENTS:

  • 1 3/4 cups confectioners’ sugar
  • 1 cup almond flour
  • 3 large egg whites, at room temperature
  • 1/4 teaspoon cream of tartar
  • Pinch of salt
  • 1/4 cup superfine sugar
  • 2 to 3 drops gel food coloring

Equipment you would need:

Oven (including convection settings)

4 baking sheets

3 baking mats

Fine Mesh Strainer

Pastry bag

First, I preheat the oven at 300 degrees celsius using the convection setting. Take the confectioners’ sugar and almond flour, measure them in cups, transfer both in equal quantity into bowl. Whisk to mix well.

I use the fine mesh strainer to sift the sugar-almond flour mixture, a little at a time, into a bowl large enough, pressing with a spatula to allow the content to pass through. There might be some almond flour remaining in the end, I don’t use that in my flour mix.

Next, I beat the egg whites, cream of tartar and salt in a mixer. I do this on medium speed until the content turns frothy. Then I increase the speed to medium high and gradually add the powdered sugar. Continue beating until the content turns stiff and shiny.

I, then transfer the beaten egg whites into the almond flour mix. Use a spatula to combine the mixture together. Adding food color and continue mixing, folding and turning, until the batter is smooth and falls off the spatula in a thin flat ribbon. This might take you, 2 to 3 minutes.

Take this batter into a pastry bag, make sure that bag is fitted with 1/4-inch round tip. Hold the bag vertically and close to the baking sheet, pipe 1 1/4-inch circles (roughly 20 per sheet). Tap the baking sheets to release any air bubbles.

Let the cookies settle at room temperature until the tops are no longer sticky to the touch, this might take 15 minutes to 1 hour, depending on the humidity. Slip another baking sheet under the first batch, this is to protect the cookies from the heat.

Put this to bake until the cookies look shiny and rise 1/8 inches, this would take about 20 minutes. You can now transfer these cookies to a rack and let them cool completely. Now just peel the cookies off the mats and sandwich with a thin layer of filling.

Repeat, for more cookies cakesandmore.

Vanilla Cheesecake Recipe for Classic Cheesecake cakesandmore Lovers

This delicious classic cheesecake has been my all time favorite for over a decade. I only knew vanilla flavour as cheesecake for the longest time. My distant aunt, who stayed not very far from where I lived, use to make these for my brother and I, every year on Christmas. At sixteen, I went through a Julie & Julia moment, where I had the urge to cook something different everyday. And when the weekend came I decided to bake, what else could I have started with but Vanilla Cheesecake, so I did. Went over to my aunt’s and got her recipe to make the perfect cheesecake I knew till then.

 

Here you have the recipe for a fluffy, delicate, vanilla cheesecake cakesandmore recipe.

INGREDIENTS:

 

  • 2-1/2 cups cracker crumbs
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup sugar
  • 1/2 cup melted butter

 

FILLING:

 

  • 225 grams softened cream cheese
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1-1/2 cups sugar

 

TOPPING:

 

  • 1/2 cup heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 tablespoons sugar

 

DIRECTIONS:

 

Take a bowl and add cracker crumbs, cinnamon, sugar and mix in butter. Take a 9 inch springform pan and grease it upto 2 inches. Put the pan to bake at 350° for 5 minutes. Put it to cool on a wire rack. Now reduce the heat to 325°.

 

Next take a large bowl and beat cream cheese, sugar and vanilla until it’s smooth. Then add egg yolks and beat the combination lightly till it looks binded.

Now in a small bowl, take only egg whites and beat them until soft peaks form; fold this into the cream cheese mixture and add it over the crust.

 

Take this to bake for 1 hour and check when when the center is almost set. Once done, let it cool on a wire rack for 10 minutes. This is before we run the knife around the edges of the pan so loosen the bake. Let it cool further and refrigerate until it is completely cool.

 

At last, mix together the sour cream, sugar and vanilla; fold in whipped cream. Take the icing and spread over the top of your cheesecake. Let the cheesecake refrigerate overnight. And enjoy until the last crumb.
